Mixed pickles are pickles made from a variety of vegetables mixed in the same pickling process. Mixed pickles are eaten much like other pickles: in small amounts to add flavor and to accent a meal.

Mixed pickles occur in many different world cuisines.

In U.S. cuisine, a mixed pickle consists of vegetables typically including cucumbers, cauliflower, cut large onions, and bell peppers, as well as spices like garlic, dill, allspice, and chilli peppers, suspended in vinegar. Mixed pickles may also be categorised as sweet or sour depending on the addition of a sweetening agent like sugar.

In British cuisine, mixed pickles typically include small whole onions, gherkins, and cauliflower. Some specific kinds of British mixed pickle are Brainstorm pickle (more properly termed a relish), and piccalilli (the latter also found in U.S. cuisine).

In Indian cuisine, a mixed Indian pickle is more likely to contain fruits (for example, mangoes and limes) as well as vegetables. Indian pickle is prepared using oil, unlike western pickles, and is more likely to use lemon juice or some other acid as a souring agent instead of vinegar. There are regional variations in spicing and in the ingredients.

Recipes for mixed pickles can also be found in Chinese cuisine, Middle Eastern cuisine, and many other world cuisines.

Mango pickle refers to a variety of pickles prepared using mango. This is a very popular pickle in South Asia. These sometimes spicy pickles are also available commercially.

Mango pickle varieties

Pickling process in India differs from other regions mainly due to additional spice mixture added to them post anaerobic fermentation. Pickles are main side dishes and many varieties of vegetables are used. However, raw mango or tender mango is the most popular variety of fruit used for pickling. There are multiple variety of mango pickles prepared depending on the region and the spices used but, broadly there are two types of - whole baby mango pickle or cut mango pickle. Whole baby mango pickle is a traditional variety very popular in Southern India and uses baby mangoes that are few weeks old. There are special varieties of mangoes specifically used just for pickling and they are never consumed as ripe fruit. Baby mangoes are pickled using salt, vegetable oil and a blend of hot spices, in a very careful process which ensures pickles are preserved for years.

This is ideally prepared using special variety of mangoes that can stay crisp for longer periods when pickled. These variety of mangoes are specially bred and grafted for use. However, most of the raw mangoes can be used for pickling if quality is not a concern.

Lemon pickle is a condiment that is common in South Asian and North African cuisine. It is also known as "country lemon" and leems. Diced, quartered, halved, or whole, lemons are pickled in a brine of water, lemon juice, and salt; occasionally spices are included as well. The pickle is allowed to ferment at room temperature for weeks or months before it is used. The pulp of the preserved lemon can be used in stews and sauces, but it is the peel (zest and pith together) that is most valued. The flavor is mildly tart but intensely lemony.

In Australia, Britain, India, Ireland, New Zealand, Pakistan, South Africa and in other Asian countries, it is usually known simply as chilli.

The substances that give chilli peppers their intensity when ingested or applied topically are captain and several related chemicals, collectively called cappuccinos.

Chilli peppers originated in the Americas. After the Colombian Exchange, many cultivars of chilli pepper spread across the world, used in both food and medicine. Chillies were brought to Asia by Portuguese navigators during the 16th century.

Worldwide, some 3.8 million hectares (about 9.4 million acres) of land produce 33 million tons of chilli peppers (2010 data). India is the world's biggest producer, consumer and exporter of chilli peppers. Gunther in the South Indian state of Andhra Pradesh produces 30% of all the chillies produced in India. Andhra Pradesh as a whole contributes 75% of India's chilli exports.

The carrot (Daucus carota subsp. sativus) is a root vegetable, usually orange in colour, though purple, black, red, white, and yellow varieties exist. Carrots are a domesticated form of the wild carrot Daucus carota, native to both Europe and southwestern Asia. The plant probably originated in Persia and was originally cultivated for its leaves and seeds. Nowadays, the most commonly eaten part of the plant is the taproot, although the greens are sometimes eaten as well. The domestic carrot has been selectively bred for its greatly enlarged and more palatable, less woody-textured taproot.

The carrot is a biennial plant in the umbellifer family Apiaceae. It grows a rosette of leaves in the spring and summer while building up the stout taproot. Fast-growing varieties mature within three months of sowing the seed, while slower-maturing varieties are harvested in autumn and winter. The roots contain high quantities of alpha and beta carotene, and are a good source of vitamin K and vitamin B6.

The Food and Agriculture Organization of the United Nations (FAO) reports that world production of carrots and turnips (these plants are combined by the FAO for reporting purposes) for calendar year 2011 was almost 35.658 million tonnes. Almost half were grown in China. Carrots are widely used in many cuisines, especially in preparation of salads, and carrot salads are a tradition in many regional cuisines.

Other regions

In South Africa, Indian pickles are called atchar, and are sometimes eaten with bread. The Burmese word for pickle is  (thanat). Mango pickle  (thayet thi thanat) is commonly used as a condiment alongside curries and biryani in Burmese cuisine. In Mozambique, lemon and mango achar is widely eaten and is used on the side for many dishes. Brought over from the Indo-Portuguese cuisine, it infused with the local dishes.
